The Tenuta Castello Carnaroli rice undergoes very light stone processing to “strip” the grain of rice as little as possible – thereby keeping more nutrients, more taste and a higher resistance to overcooking.
Its exceptional cooking properties and ability to increase volume by absorbing liquids, aromas, smells and seasoning is much higher than any other rice variety. This is why we always advise 70 g of rice per portion of risotto.
