Rice pudding with cocoa
Rice: Vialone nano
Time: 2 hours
Yields: 4 serving
Rice Vialone Nano 100 g; 400 ml milk; 50 g unsweetened cocoa powder; crushed hazelnuts for garnish. 40 g amaretti (Italian almond biscuits)
Boil the rice in the milk for about 15 minutes. When the rice is nearly cooked add the cocoa and crushed amaretti and mix. Process the mixture in a food processor or blender until creamy but maintaining rice texture. Pour into dessert cups and let rest for about two hours. Garnish with ground hazelnuts and serve.
