Classic Carnaroli Rice... never white!

The light stone processing keeps the properties of the grain intact: resistant to overcooking, it has a high percentage of fibre and an intense taste. Our attentiveness to health and nutritional values has led us to increasingly reduce the processing of our rice which is not whitened, but kept darker.

By keeping its taste and natural structure intact, the Tenuta Castello Carnaroli Classic rice is an excellent product.

The term “Classic” indicates that this rice is 100% Carnaroli and does not include other similar varieties like Karnak or Carnise that can be sold as Carnaroli.

All our Carnaroli rice comes from seeds certified by E.N.S.E. (Ente Nazionale Sementi Elette: National Selected Seed Association ).

Carnaroli Classico Biologico differs from Carnaroli Classico in the use of growing methods employed, with no use of chemical substances or pesticides at any of the growing stages in the bio (organic) product.

The difference between Classic Carnaroli Bio and Classic Carnaroli Brown Bio is that the integrale (brown) rice has not been subject to further milling to remove the bran layer, and maintains all the layers of the grain (glumes), apart from the husks (inedible external hulls).

It is highly valued for its compact, soft, light grains which are less separated than the Carnaroli grains, and therefore enjoyed by anyone who prefers their risottos to be more liquid or fluffier rice salads. It is a medium grain rice, with the grain therefore small and rounded and very high in amylose.

The red colour of the pericarp is linked to the presence of anthocyanins. It has nutritional value and antioxidant powers that are similar to the Black rice variety, but cooks faster.

The typical black colour derives from the presence of anthocyanins which are powerful antioxidants. It contains high amounts of fibre and mineral salts (Selenium, Magnesium, Zinc and Iron).
It originated in Italy from a natural cross between a (black) Asian variety and an Italian variety.

This ancient cereal has regained popularity thanks to its nutritional qualities. Our spelt is packaged as a wholegrain cereal and not pearled. It therefore conserves all its nutritional and taste qualities.
